Bacon & Tomato Casserole

Bacon & Tomato Casserole

(Serves 2)

4 thick slices of bacon
1 onion
4 medium sized potatoes
8 tomatoes
1 oz olive oil

Preheat oven to 200c/ Gas Mark 6

Cut bacon slices in half and put 4 pieces in bottom of casserole.  Cut onion in half, slice and cover bacon with the onion slices.   Slice tomatoes and put half of the slices on top of the onion and then slice the potatoes and use half of the slices to form the next layer.

Repeat the layers, i.e. bacon, onion, tomatoes and potatoes.    Drizzle with the oil.

Cook in the hot oven for 1 hour.

Delicious served with green vegetables
