Delicious home-cooked recipes suggested by the villagers of Winteringham, Lincolnshire

 

Bacon Rosti

(serves 2)

4 ozs bacon, derinded and chopped
1 lb potatoes, peeled and left whole
1 tablespoon olive oil
1 small onion, finely chopped
1 glove garlic
3ozs sweet corn
2 tablespoons fresh chives, finely chopped
Seasoning to taste

Cook potatoes for 8 mins in a large pan of boiling water.  Drain and allow to cool.  Grate.

Heat oil in frying pan.  Add bacon, onion and garlic.  Cook until coloured.  Add the grated potato, sweet corn, chives and seasoning. 
Cook on one side for 3 - 4 mins, then turn the mixtures.  Continue cooking and turning the mixture until browned.  Serve immediately.
