Bread Pudding

BREAD PUDDING

Ingredients:

1 White Loaf
2 oz Margarine
2 oz White Sugar
2 Level Teaspoons of Mixed Spice
6 oz Dark Brown Muscovado Sugar
12 oz Mixed Dried Fruit and Sultanas

Method

Break up the bread into approx size 1" pieces and put into a large basin or bowl and cover with water to soak. Leave for no less than 1 hour.
Get rid of as much water as possible with a sieve.
Melt the marge in the microwave (it will be easier to mix it in). Put this and all the other ingredients in and mix well. Empty into a large tin which has been well greased. Cover with foil and put in the oven on gas mark 5 for 1 hour. Remove foil and cook for a further 1/2 hour. Turn off the gas and leave for a further 10 minutes then take it out and allow to cool before sprinkling on white sugar
