Soup is always best made with your own vegetables straight out of the garden, or by buying locally from gardeners or greengrocers. There are several excellent suppliers in Winteringham and the surrounding district.
200g of red lentils
2 large or 3 small leeks
2 large carrots - diced
1 small swede - diced
1 litre of stock (made from 2 ham stock cubes)
Dissolve the stock cubes in the litre of water in a large saucepan.
Add the lentils, and all the other vegetables.
Simmer for one hour, or until the carrots and swede are tender.
Just before serving, add chopped parsley, if desired, and serve.
