1. Cooking the turkey: (Helen Kirk)
Wrap the turkey in aluminium foil and roast on its breast!
An hour before cooking is due to be complete, carefully remove the aluminium foil, and turn the turkey the right way up! This will give a juicy turkey that is perfectly cooked and looks it!
2. Perfect roast potatoes: (Helen Kirk)
Par-boil your roast potatoes BEFORE placing in the roasting tin. This “fluffs up” the outer part of the potato and helps give a perfect, crispy roast potato!
3. New potatoes at Christmas: (Helen Kirk)
Easy! Take some of your first new potatoes. Blanch them in boiling water for four minutes, and freeze. Delicious at Christmas (or any other time of the year!)
4. How big a turkey: (John Kirk)
If you have a lot of guests and are wondering how far that turkey will go, the usual recommendation is ¾ lb of oven ready turkey per person. Bear in mind that this is a guide only for reasonably large turkeys (the smaller the turkey, the higher the ratio of bone to meat).
