Date Squares

Delicious home-cooked recipes suggested by the villagers of Winteringham, Lincolnshire

Date Squares

Date Filling:
* 400 grms of pitted dates  
1 cup of water
½ teaspoon vanilla essence



Oat Meal Crust:

200 grms of rolled oats
1 cup S.R. Flour
160 grams of light brown sugar
½ teaspoon of Baking Powder
Pinch of salt

(small amount of ground cinnamon if required)

225 grms of butter or marg cut into cubes.


* I just used a 'square' of dates and broke them up in the pan and warmed gently)

Oatmeal Crust
In the bowl of your food processor place all the dry ingredients and pulse to combine.Then add the fat and pulse until combined together.  The mixture will be crumbly and just beginning to come together.  Press about 2/3 mixture into the prepared baking tray.

Spread the date mixture over the crust.  Sprinkle the remaining oatmeal mixture over the dates and press down gently to compact the crust.

Bake for about 30 - 40 minutes (until golden brown)   Leave to cool before trying to cut.


I found this mixture was not enough for a swiss roll type tray and did approx one and a half times the mixture for the crust.

I've just used the crust recipe to make an apple & mincemeat tray bake.
