Emily Bell’s Ground Rice Cheesecake

Short Crust Pastry.
1. 1/4lb Margarine.
2. 1 egg.
3. 1/4lb sugar.
4. 1/4lb Ground Rice.
5. Pinch Salt.
6. Little Milk.

Cream butter and sugar,add the egg and beat well,then add ground rice, milk and salt.Line patty tins with pastry,put in a little jam and cover with the mixture.
Bake in a hot oven. Can be eaten hot or cold.
