Gammon and Apple Hash

Gammon & Apple Hash

1 tablespoon of olive oil
1 red onion - peeled and chopped
1lb potatoes - cut into cubes
1 large clove of garlic
3 1/2 ozs of unsmoked gammon - chopped
1 red apple - cored and chopped
6 ozs broccoli - cut into small florets

Heat the oil in a frying pan, add the onion, potatoes and garlic - cover and fry for 15mins over a low heat until softened.

Stir in the gammon, apple and broccoli and cook for a further 10mins.
Serve hot.
