Mint and Strawberry Sauce
Here’s a tasty sauce, and good to make if you have a glut of strawberries and mint in the garden and wonder what on earth you can do that is a bit different! You’ll be thinking of those glorious summer days right through winter!
Mint - a good quantity - depends on what you have available!
Cooking and serving
Place the strawberries in pan with sugar and bring to the boil.
Simmer until soft, and keep stirring until the strawberries are all broken up.
Add a large amount of fresh, and finely chopped, mint.
Continue cooking for about 10 minutes.
Add the balsamic vinegar to taste and cook for a further 10 minutes.
Cool, and then pour into sterilised jars.
Use on pork and lamb dishes, on fried crispy goats cheese or on courgettes in breadcrumbs, fried and served with a little salad and the strawberry mint sauce!
