Delicious home-cooked recipes suggested by the villagers of Winteringham, Lincolnshire

3 tbs olive oil
1 1/2 lbs potatoes, peeled and sliced thinly.
Large onion, sliced
4 ozs smoked streaky bacon, sliced
5 medium eggs
Seasoning to taste
4 ozs cheddar cheese.

Pre heat the grill.

Heat oil in frying pan.  Add potato slices and sauté over medium heat for approx 10 mins or until golden brown.  Add onion and bacon and continue to sauté until golden brown and crisp.

Beat eggs with seasoning.  Stir half of the cheese into the pan and then quickly add the beaten eggs.  Shake pan to level the surface.  Scatter over remaining cheese.
Cook for approx 10 mins  or until most of the egg has set. 

Pop pan under the grill and cook for a further 5 mins or until all the egg has set and the top is golden brown.    Leave to stand for 5 mins before serving - serve warm cut into wedges.
