Potato & Carrot Mash with Melting Onions

Potato and Carrot Mash with Melting Onions

1 lb carrots
1lb potatoes
1 1/2 ozs butter
1 large onion peeled and sliced into thin wedges
6 ozs full flavoured cheese such as Cheddar or Lancashire
Salt & pepper to taste

Peel the carrots and cut into small chunks.  Pell potatoes and cut into large chunks.  Put the vegetables into a pan of cold salted water and bring to the boil.  Boil until tender.

Drain well then return them to the pan and cover with the lid.  Leave for approx 5 mins to allow excess moisture to dry off.

Whilst the vegetables are cooking, melt the butter in a frying pan and cook the onion until it is golden brown.

Mash potatoes and carrots with the cheese but leaving quite speckled and rough.  Season as required with salt and pepper.  

Serve the mash with the caramelised onion on top.   (Good topping for Shepherds Pie).
