1 tsp olive oil
8 large sausages
1 ½ lbs potatoes, peeled
2 medium carrots, peeled
Mixed dried herbs
400g can tomatoes
Preheat oven to 180C/Gas mark 4.
Heat oil in frying pan, brown the sausages on all sides. Remove and drain on kitchen paper.
Thinly slice all vegetables, reserving a few potatoes.
Layer the vegetables in casserole dish, season and sprinkle with herbs. Place sausages in the middle and finish with a layer of the reserved potatoes. Pour over the tin of tomatoes. Add ¼ pint water to the casserole. Cover with lid and cook until tender. Approx 1 hr to 1hr 20mins.
Heat the grill to high and brown the potatoes. (Sprinkle with parsley if available).
Serve with green veg.
