4 oz cheddar cheese, grated
2 eggs, hard boiled and chopped
1 lb mashed potatoes
1 large onion, chopped
1 oz butter
3 tomatoes, skinned and sliced
Seasoning to taste
Add 2 ozs of cheese and the hard boiled eggs to the potatoes. Season
Gently fry the onion in the butter until transparent, add tomatoes and fry for a further minutes.
Place half potatoes mixture in a greased casserole, cover with onions and tomatoes, top with remainder of potato mixture.
Scatter with remainder of cheese and bake at 220°C, Gas 7 for 30 mins.
